Cranberry Pecan Apple Chicken Salad

I serve this creamy/sweet chicken salad atop crispy iceburg lettuce with raw veggies and hummus on the side. It also keeps REALLY well in the fridge all week.

Smokey BLT Chicken Salad

Another chicken salad recipe from my favorite recipe blogger, Sweet Savory and Steph. This is smokey and delicious and uses center cut bacon, which is a less fatty cut of bacon. It tastes delicious atop baby spinach.

Healthy Buffalo Ranch Chicken Salad

This is a spicy and tangy chicken salad that is going to keep you FULL. I love adding extra finely-diced veggies like carrot, celery or broccoli to this salad to add more fiber and volume. I like serving this with baby spinach drizzled with balsamic vinegar, salt and pepper.

Spicy. Smokey. Sweet. This healthy chicken salad is chock-full of protein and fiber to keep you full and satisfied. It's great with little mini naan dippers or served inside of a hot, freshly-baked sweet potato.

Healthy Street Corn Chicken Salad

Do NOT leave me alone with a plate of Mexican street corn. Don't do it. Chaos will ensue. I will become a raccoon. That's why I love this Mexican street corn-inspired chicken salad. Try it in a Carb Balance tortilla that you crisp up in a frying pan with a lil' olive oil spray. Thank me later.

Spicy Bell Pepper Nachos

The College Nutritionist's bell pepper sandwiches are so. freakin'. good. These are excellent with shredded chicken, ground turkey or even deli chicken slices. Try them out with some grilled or air-fried cauliflower drizzled with balsamic vinegar on the side.

Light Slow Cooker Florentine Chicken

Rich and creamy and full of protein - I like to serve this creamy florentine chicken on top of steamed cauliflower rice or jasmine rice. Add in a side of air fried-zucchini or a bed of arugula with a balsamic drizzle, and you're done!

BBQ Chicken Sweet Potatoes

These are SO EASY to make. They're a great last-minute option when you don't have anything prepped in the fridge for weeknight dinners. I love adding a little bit of shredded cheddar on top to get it all melty. Serve with a side of non-starchy veggies.

Healthy Buffalo Chicken Pasta

Oh my word. You're going to lose your mind when you eat it. Switch this recipe up by adding blue cheese instead of cheddar (if you're a fan!) and add mini Laughing Cow cheeses to save on calories while still makin' it creamy. I love eating this with a big beautiful bowl of arugula dressed with lemon juice, salt and pepper on the side.

Buffalo Chicken Chili

This lil' bowl of chili from My Bizzy Kitchen is spicy, filling, and has a hefty portion of protein in it. 31g per serving, to be exact! You get 31 grams of protein for *1* WW point. (That's insane y'all.) Sprinkle it with a little bit of fat free cheddar, spring onion and a dollop of plain nonfat greek yogurt.
